Missy's Disaster (aka Strawberry Cake) Recipe

Okay, anyone who took part in last week's Valentine's chocolate contest read about my strawberry cake disaster. (Remember the part where I found myself saying, "Oh, there's a piece of the cake that was missing!" Not a good sign.)

So here's the recipe. I call it Boop's Strawberry Cake, since I got the recipe from a friend named, yes, Boop. I've made a couple of modifications over the years. And please note that I think my mistake was in using sliced berries instead of chopped!

Cake:
1 Box Duncan Hine White Cake Mix
1 small box strawberry jello powder (just add as it is)
4 eggs
1/4 cup vegetable oil
1 small box frozen strawberries (berries and juice) and just the juice from a second box (reserve the strawberries). Chop the berries in the food processor before using!

Mix all ingredients together, adding eggs one at a time. Bake at 350 degrees for about 45 minutes.

Icing:
1 stick butter, creamed (original recipe called for 1 stick margarine, melted)
1 box confectioners sugar
Add in reserved strawberries from the cake recipe

Blend together and ice the cake!

It's very moist and tasty, even if it falls apart. :)
